Sometimes we need simple reminders to keep ourselves in check. Summer brings outdoor fun, travel, vacations and sometimes long and busy days where we can easily slack off in the nutrition department. This is a dish I make in the summer with fresh ingredients from the local farmers market. Fresh tomato, wilted kale with boiled chicken over a bed of brown rice. It’s quick and easy when you make a batch of brown rice earlier in the week and keep it in the fridge. Just pull out what you need and warm it up.
