Quick Summer Night Salad


saladIt’s been so hot and humid the last few weeks, this has been a great go-to meal. Last night’s dinner: Egg, wilted kale, cherry tomato with basil, and cucumber – with lemon and olive oil. Mmmmmmm.

I find all of these items at the local farmer’s market and vary what’s on the plate to what is most fresh and available at the time. #ToGoodHealth.
