Food Prep: My Bro Cilantro

herbsWhat I love about cilantro is both the flavor and the scent. People seem to either love it or hate it. Since I love it, I’ll rattle on why.

Cilantro has about 8 different natural antibiotic properties and has been shown to be effective in treating Salmonella. These properties have been inspiring food scientists and are a point of interest for research. It is frequently used by naturopaths and shown to have an anti-anxiety effect, help improve sleep, lower blood sugar levels, and aid digestion.

I like to prepare cilantro, parsley too, so I can grab a handful and toss it in salad or other dish. First, wash it and cut the bottom inch off. Then pat dry. I like to chop it into 1 or 2 inch pieces and place in a zip lock bag or container. You can also place a small piece of paper towel in with it to help it keep longer.

I always thought cilantro would make a nice perfume and guess what I found? In ancient Greece the oil was used as a component of perfume. Cool!
