I like to prepare foods that I can use throughout the week. This week found a container of cherry tomatoes for $1.29 at the local produce store along with a package of sliced baby bella mushrooms on sale for $1.68. You can roast them dry or toss them together in some olive oil, salt and pepper and roast them at 350 degrees until your desired doneness (I put turmeric on the mushrooms – a good anti-inflammatory spice among other things). Roasting really concentrates the flavors. Toss them in some brown rice with something green for lunch or use during the week as good tasting meal option additions.
